End grain boards are superior to long grain boards and plastic because the wood fibers in an end grain board run vertically as opposed to horizontally in long grain boards. As a result there is less damage to your knife and the board itself when it is used. Fewer cut marks mean less bacteria trapped on the board. In addition, end grain boaards have antimicrobial properties that limit the abillity of bacteria to live on the board.
